3.5 pounds pork loin back ribs (3.4 lbs 'extra meaty' fed 3 people)
1/4 cup packed brown sugar
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons liquid smoke
2 garlic cloves, chopped
1 medium white onion, quartered and separated
2 liters Coca Cola
12 oz barbecue sauce
Spray inside of Crock Pot with cooking spray.
Remove inner skin from ribs. Use a butter knife to get it started, then it should just peel off.
Cut ribs into roughly 4 inch pieces (into approximately 3 sections).
Mix brown sugar, salt, pepper, liquid smoke and garlic in a small bowl.
Rub mixture into both sides of each section of ribs.
Layers the ribs and onion in the slow cooker.
Pour Coke next to the ribs until they're almost totally covered.
Cover and cook on low heat setting 8 to 9 hours or until tender.
Remove ribs from slow cooker and discard the liquid.
Pour a little barbecue sauce into the bottom of the slow cooker, then put the rib sections back into it, covering each one with more barbecue sauce. Pour any remaining sauce over ribs.
Cover and cook on low heat setting for another 30-60 minutes.
